Thai Soup Stock

Ingredients:
– 9 cups of water
– 600 grams of chicken bones (or pork, beef, or fish)
– 2 stalks of celery, chopped.
– 2 onions, quartered
– 2 coriander roots, chopped
– 3 Kaffir lime leaves
– 1 tablespoon of ginger, chopped
– salt
– pepper

Method:
1. Place all ingredients in a large saucepan and bring to a boil. Keep it boiling for several minutes, then simmer. Skim fat from the surface.
2. Cover and simmer for an hour.
3. Strain the soup through a fine sieve. The aim is to get as clear a stock as possible.
4. Refrigerate, and then skim the surface for fat again.

Thai Green Curry Chicken

Ingredients:
For 4 Servings
– 1 Tablespoon green curry paste
– 1 Tablespoon oil
– 400 ml Coconut milk
– 400 grams Chicken, cut
– 3 eggplants (about 500g), cut in small pieces
– 1 cup water or chicken stock
– 1/2 Teaspoon sugar (more or less, to taste)
– 1 Tablespoon fish sauce (more or less, to taste)
– 1 handful Thai sweet basil (or regular basil)

Method:
1. In the pan heat oil with green curry for 1 minute, put a bit of coconut milk in and stir for 1 minute.

2. Add chicken and stir until half cooked, top up all coconut milk, water, eggplant, fish sauce and sugar. Taste.

3. Add basil and turn off the heat.

4. Serve with rice or Japanese  somen noodles.

Tom Yum Goong (Hot & Sour Prawn Soup)

Ingredients:
For 4 servings

(1)
– 4 cups water
– 1 Kaffir Lime Leaves
– 1/4 white onion slice (optional)
– 1/2 Carrot slice(optional)
– 1 Tomato slice(optional)
– 3 Slice kalangal
– 1 tablespoon Tom Yum paste(more if you want to make it hotter)

(2)
– 1 Cup mushroom
– 8 Prawns- cleaned

(3)
– 1 teaspoon coriander (cilantro) cut
– 1 Teaspoon spring onion cut
– Fish sauce & lime juice.

Method:
Put ingredients (1) in the pot and boil for 5 minutes. Then add mushrooms and boil for 1 minute. Add prawns and turn off the heat.

Serve 2 prawns in each bowl with coriander, spring onion, fish sauce, lime juice to taste.
